James SucklingGómez Cruzado has built a new winery and technical director Juan Bautista says the aim is to better understand the parcels they find most compelling. They have focused on concrete alongside relatively large French oak vessels of 8,000 and 10,000 liters. With increasingly unpredictable yields in recent harvests, Juan notes that when fermentation vessels are too large for smaller volumes, temperature sensors and controls need to be distributed throughout the tank to ensure a precise reading. Temperature during fermentation is key, not only as an indicator of activity, but also as a way to manage extraction and preserve aromatics.

The new winery addition, built of stone by a Galician stonemason, is in keeping with the original winery opened in 1866.
